Stopped into Virginia’s Gift Shop on the way out of Knott’s Berry Farm during our last visit and picked up some staples that are always handy to have around. Muffin Mix, Jam, and of course with grilling season is upon us some Knott’s BBQ Sauce. I already had all the fixings for a Boysenberry Cobbler and decided to create a dinner using everything. Needing a salad option to go with my BBQ Wings, Muffins with Jam and Cobbler dessert, I threw together an easy salad using the Boysenberry Salad Dressing I picked up.

If you are looking for a versatile and simple dish to take to a friends cookout, use at a picnic or to just have on hand for lunches, this salad is easy and quick to prepare. You can make this salad ahead of time and the best part is it won’t get all soggy and will even be good the following day.

Here’s what you will need:

  • Fresh Broccoli Crowns

  • Fresh Bacon Crumbs

  • Pine Nuts

  • Dries Cranberries

  • Candied Pecans

  • Knotts Market Boysenberry Salad Dressing

Clean and cut broccoli crowns into bite side pieces. I used fresh cook bacon, cutting it up first before cooking it which makes it faster to crisp and assures it was well done on all sides. Draining and allowing to cool, add the bacon bits and all the remaining ingredients. Finish off by tossing it all with the Knott's Market Boysenberry Dressing to taste. I like to drizzle a little on the top before serving to give it a finishing touch. Not too sweet and very colorful, this side salad is perfect with sandwiches, BBQ chicken or ribs or a grilled steak! Not a fan of broccoli, you can substitute it with kale. Chill until ready to serve.
