Caldo De Pollo

           So he's finally made it! El Nino. Well I have the perfect soup to make for the many cold and wet nights we are expecting this winter. This one pot soup will leave you feeling full, warm and wanting mas y mas! Caldo De Pollo or chicken soup is made with lots of veggies and full pieces of chicken, hearty and oh so buenessimo.

Here is what you will need:

  • Chicken thighs or legs skinless, boneless if you like. I used bone in added 6 pcs total.
  • 2-3 Stalks of Celery
  • 2-3 Quartered Roma Tomato
  • 1/2 Onion
  • 3-Carrots Chopped
  • 1- Chayote  Chopped
  • Cilantro for Garnish
  • 1-2 Potatoes Chopped

Here is what to do:

Add chicken and cover with water leaving room for vegetables. Add Onion and bring to a boil. Add chicken bullion to taste. Chop up veggies to desired sizes small or large is up to you. Add everything, reduce heat and simmer till chicken is done. Serve hot with warm tortillas, slice up some limons or lemon and top with cilantro. Serves 4-6 Total prep and cooking time less than 2 hours. So good and healthy too! Provecho!

Tip: This recipe can be switched up a bit with the addition of a good beef chuck roast in place of the chicken, cabbage and corn on the cob to make Calod de Res or Cocido.
